My husband had the same issues with eating early on, he lost 20 lbs (and didn't need to) but is now eating like before dx and has gained back almost 10 lbs.
I was tracking everything he ate for several months in a spreadsheet (yes, I was a bit fanatic about it)-- calories, fiber, and protein. Early on, I was more concerned with the highest calorie food I could get him to eat since he ate so little (he wasn't hungry, said food tasted funny, etc), then I gradually shifted over to more heathy food, but still trying to keep calorie counts up, and now I'm tending towards a healthy, but very low animal-protein diet.
Some of the things I fixed when eating was an issue were:
- Ensure Plus (2/day) blended with 1/2 c Hagen-Daz vanilla ice cream and either 1 TBS flaxseed oil or canola oil or whey protein powder -- this can bring it up to over 700 calories per serving and it has vitamins/minerals that she needs too.
- Cream-based soups like Tomato Soup, I just used the Campbell's condensed and mixed it with heavy cream; Potato Soup; Broccoli Cheese Soup
- Scrambled eggs with cheese
- Mayo-based salad sandwiches: Egg salad, chicken salad, tuna salad
- He loved Philly-cheese steaks and our friend has several shops in town that make 'the best' ones so I picked these up now and then
- Chef's salads with blue cheese dressing
I hope you have good luck in helping your mom gain some weight back, I never thought it would be hard but boy was I wrong. I can gain five pounds overnight it seems, but it was a real struggle to help him gain -- it finally happened though.
We are nine months past dx now, it takes time. I finally stopped tracking everything about two months ago (I had done it for five months) because my husband started to consistently gain rather than lose each week.
