I know the difficulties of recovering from this surgury.  I had it 2/17/09, and was in the hospital for 9 days.  Your oncologis should be able to give you the name of a nutritionist that can help make the most of what foods can be taken in.  Depending on your dad's body type and desired weight they can recommend food supplements.  I can tell you that it does get better.  After being out of the hospital for four weeks, I can eat most things but very small amounts and I go after the protein and carbs as much as I can.

Does your Dad have a feeding tube in?  That is one way to get the nutrients and callories to go with what can be swallowed.  I had mine removed last week as I didn't need it anymore and my weight has stablized.
