Glad to hear the good news about your first anniversary and good health.
I'm going to assume you are eating lots of food (calories) and not gaining weight. Also, will assume you have been checked and have not developed diabetes. That was one of the things that happened to me and caused me to continue losing weight at first.
Thought you may find what happened with me interesting. After I got my blood sugar under control, I was able to maintain weight with no problem. Our drug insurance plan gave preference to Lipram PN10 for prescription pancreatic enzymes and I took those for several years. No weight gain or loss, which was OK with me. Then the insurance plan changed to Creon for the preferred drug, so I started taking Creon. No change in dietary habits. I eat the basically the same amount of calories every day because I control my diabetes with diet and exercise. But since I started taking Creon, not Lipram PN10, I have mysteriously gained ten pounds slowly over the past 18 months. Now I am in a situation that I do not want to gain any more weight and must reduce calories.
Bottom line I guess is, if all else fails, try changing to a different pancreatic enzyme. There are many different ones, all with different formulas so maybe you will also find one that is more effective for you.

Never in my life have I eaten to gain weight. It was always the opposite!
