I was a vegetarian for over 52 years and will continue to to be one even after my sugery and treatments. Organic food is the safest and worth the extra expense. The only change that I made to eliminate as much soy product as possible especially since I read that it contains phtyoestrogens and I was diagnosed with uterine carcinosarcoma in 2004. I have to be careful about my Vitamin K intake because I am on anticoagulation for blood clots and this vit is the antidote to the blood thinner. As a confirmed veggie it is difficult for me to find unlimited food with my diet restriction of dark green leafy vegetables...but they have very nutritional value especially vitamin K and iron...also it is important to read labels on the food for added preservatives, food dyes, etc. I hope this helps...fruits such as bluberries, raspberries, strawberries and cranberries are a good source of antioxidants and can be used in so many recipes..also good summer fruit with vitamin A and C is cantaloupe...also keep yourself hydrated this summer with non sugary-non carbonated fluids and limit very sweet fruit juices that are high caloric...discuss a change in a diet like this one first with your doctor before attempting to become a veggie...best wishes and let's beat our disease together
