Our blood pH is regulated by our metabolism and doesn't have a whole lot to do with ingesting bicarbonate through our digestive tracts. It is related to the process of cellular respiration, the laws of chemistry, etc. and is much more complex than simply eating baking soda. Bicarbonate does buffer our systems, which is why people think this makes sense and works, but this is massively oversimplified in terms of human physiology.
