I had several go to's this time around:
Guacamole Salad: Smashed Avocado, diced tomato, diced sweet onion, cilantro, and LOTS of lemon juice. Mix it around and enjoy. For heat I added diced jalapeno.
Baked corn chips: 400°, cut corn tortilla's in 4's and placed on baking sheet. Sprayed Canola oil and drizzled non-iodized salt on them. Baked for about 12 minutes until they were crunchy.
