Caramel Nut Popcorn

Prep Time: 10 minutes
Cooking Time: 1 hour 15 minutes

2 packages Smart Pop 99% popcorn
1/4 cup butter
1/2 cup brown sugar
1 teaspoon salt
1/4 cup brown rice syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda
2 cups sliced almonds
1/2 cup unsweetened shredded coconut

  1. Preheat oven to 250 degrees.
  2. Cook popcorn according to directions, pour into very large bowl, set aside.
  3. Melt butter in pan, stir in brown sugar, salt, syrup.
  4. Bring to boil, reduce heat, simmer for 5 minutes, stirring constantly
  5. Remove from heat;
  6. Carefully stir in vanilla and soda
  7. Pour mixture over popcorn and stir well.
  8. Add almonds, mix thoroughly
  9. mixture into large baking pan, sprinkle with coconut.
  10. Bake in preheated oven for 1 hour, stirring every 15 minutes.

It really amazes me to see such a hi fat and hi sugar recipe publicized in a cancer website!  It is well know that fat and sugar are not healthy for anybody.

sometimes you gotta have a treat! cutting fat and sugar out of your diet isnt good for you either!!

I was thinking the same thing. I have always been told and read that sugar feeds the cancer cells..........
