Spinach and Cheese Tortilla Pizza

By using tortillas, this is an easy yet satisfying meal.


Makes 12 slices


2 large (10-inch) flour tortillas 
2 tablespoons nonfat plain yogurt 
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry 
1 large tomato, chopped 
1/2 cup shredded reduced-fat Monterey Jack cheese 
1/4 cup chopped green onions 


1. Preheat oven 450F. 
2. Place tortillas on baking sheet coated with nonstick cooking spray. Bake 3 minutes, or until golden brown. Remove from oven and reduce temperature 350F. 
3. Spread yogurt evenly over tortillas. Top with spinach and tomato. 
4. Next, sprinkle evenly with the Monterey Jack cheese. Bake 5 minutes more, or until cheese is melted. Sprinkle with green onions. Cut each tortilla into 6 slices and serve immediately.
