Stuffed Shells

10 Jumbo pasta shells
8-12 oz tofu, silken
¾ cup Parmesan cheese
½ cup mozzarella cheese
¼ cup medium onion, finely chopped
4 scallions, finely chopped
¼ cup oregano
¼ cup basil leaves (optional)
2 cloves garlic
Salt/pepper to taste
1 large egg, lightly beaten
1 jar (24 oz) spaghetti sauce

Preheat oven 350 degrees F.  Cook pasta shells as directed on package; drain and let cool.  Prepare filling by mixing all remaining ingredients together in a large bowl.  Place mixture into shells.  Line bottom of 11 x 7 baking pan with ½ of spaghetti sauce.  Placed stuff shells in pan and cover with remaining spaghetti sauce.  Bake for 30 minutes. Sprinkle with Parmesan cheese and serve.

Note:  Flavor will intensify if prepared 1 day in advance. Makes 5 servings (2 shells each)
