Vegetarian Chili

Prep Time: 5 minutes
Cooking Time: 60 minutes

½ white onion, diced
4 cloves garlic, smashed
2 tablespoons extra virgin olive oil
1 14.5 ounce can red beans, drained and rinsed
1 14.5 ounce can garbanzo beans, drained and rinsed
1 14.5 ounce can pinto beans, drained, rinsed
⅓ cup chili powder
4 cups chopped tomatoes, canned or fresh
1 tsp cayenne pepper (optional)
1 bay leaf
Salt/pepper to taste

Sauté onions and garlic in olive oil.  Add beans, tomatoes, and seasoning.  Simmer for one hour and then remove bay leaf.  Add salt and pepper to taste.
